The interaction of cork structure with wine
-Natural Cork Stoppers have na important role in bottled wine microoxigenation.
-Natural Cork has in its interior cells that are full of air, linked between themselves by a micro-hole that links the air masses inside the cork .
-When the cork is compressed into the bottle, this air mass is also compressed. On the outside of the cork, the contact with the glass contains this air mass within the cork. If we have a good sealing in the inferior end of the cork, only this one will be in direct contact with the wine and will be the only way to transfer oxygen between cork and wine
-In cork stoppers we can consider practically null or constant the oxygen ingress from the exterior. The variation of oxygen ingress will only be dependant on the cork type.
